Hand-forged by Kyohei Shindo in Tosa, Japan, this 270mm sujihiki combines his characteristically rustic finish with exceptionally thin, performance-focused geometry.
The long, narrow blade is designed to slice cleanly through boneless meat and fish using a smooth drawing motion. At its centre is Hitachi Blue #2 carbon steel, forge-welded within softer iron cladding using traditional warikomi construction.
Shindo-san leaves much of the knife’s handmade character visible. Natural variations in measurements, hammer marks, forge finish and handle grain are to be expected.
Care
This knife is fully reactive and will develop a natural patina. Wash it by hand and dry it immediately after use. Do not place it in a dishwasher or use it on bones, frozen food or unsuitable cutting boards.
