Size with purpose
The Big Boy earns its name with a generous 272 mm blade and a 57 mm blade height. Its long edge offers plenty of room for larger ingredients and extended slicing strokes, while the tall blade provides useful knuckle clearance.
At 234 g, it brings a substantial presence to the board for cooks who enjoy working with a larger knife.
52100 carbon steel
Hardened to 64–65 HRC, the 52100 carbon steel makes this a knife for users who appreciate a hard carbon steel edge and are happy to give it the care it deserves.
About the maker
Matt Sicard is a full-time Canadian bladesmith and the maker behind MSicard Cutlery. Raised in rural Ontario, he brings a practical approach to his craft, creating handmade kitchen knives with a focus on performance, everyday usefulness and value.
Matt personally designs and crafts his knives, working with a wide range of steels and handle materials. His work combines the character of an individually made blade with a clear purpose: to be used and enjoyed in the kitchen.
Care
52100 is reactive carbon steel and will develop a patina with use. Hand-wash, wipe dry promptly and avoid leaving it wet or soaking. Apply a light coat of food-safe blade oil before longer storage. Do not put it in the dishwasher or use it on bones or frozen food.
