This handmade Ko-Bunka combines a compact 141 mm blade with a generous 51 mm height. Its short cutting edge makes it easy to control, while the tall blade provides comfortable knuckle clearance and useful space for transferring prepared ingredients from the board.
At 147 g, it feels more substantial than its compact dimensions might suggest. The distinctive angled tip is useful for accurate detail work, while the main edge is well suited to everyday vegetable, meat and general preparation.
52100 carbon steel
52100 is a fine-grained carbon steel known for its toughness, edge stability and ability to take an exceptionally keen edge. It offers excellent cutting performance and is a popular choice among skilled custom knifemakers.
As a reactive carbon steel, the blade will naturally develop a patina during use, giving each knife its own individual character.

Matt Sicard is a full-time Canadian bladesmith and the maker behind MSicard Cutlery. Raised in rural Ontario, he brings a practical approach to his craft, creating handmade kitchen knives with a focus on performance, everyday usefulness and value.
Matt personally designs and crafts his knives, working with a wide range of steels and handle materials. His work combines the character of an individually made blade with a clear purpose: to be used and enjoyed in the kitchen.
Care
52100 is reactive carbon steel and should be hand-washed and dried immediately after use. A patina will naturally develop over time. Apply a light coating of food-safe blade oil before longer periods of storage.
Do not place the knife in a dishwasher or use it to cut bones, frozen food or other extremely hard ingredients.
